As spring is just around the corner, I have been making lots of my favorite healthy coleslaw lately. The taste is amazing and the fat content is low compared to other coleslaws. It keeps well for days in the fridge and can be made a few days in advance. Overall, it's good to have food prepared in advance, especially when we are busy.
